Chickpea flour is great for these savory crepes. The filling is sauteed asparagus, smoked ham and reduced-fat cheese.
For 2 thick pancakes, mix 1 cup of chickpea flour, 4 eggs, 1/4 cup of mlk, a pinch of salt. Cook them for about 4 minutes, fold and cover for another 2 so that the cheese melts. done!
Hmm…Delicious!
